Been back to the dealership today they took some pictures and told us they would be in touch as they don't no if it is covered on the warranty. The stitching has let go or the material is ripped?

Either a new seat cover (new seat wouldn’t be necessary), or find an upholsterer near to you (Liverpool area?) who could replace the damaged part with matching fabric. A new seat cover is likely to be quite expensive though.
A quick Google for ‘car upholstery repairs - Liverpool’ returned the following matches - there are others; this was just the first three;
- Autotrim Merseyside; Knowsley Industrial Park, Ashcroft Road, Liverpool (no website)
- Liverpool Coachtrimmers - https://www.liverpool-coachtrimmers.co.uk
- Auto Interiors; 56 Norfolk Street, Liverpool (no website)

I just returned a Leon FR which had a similar issue, it happened around 18 months into the lease and was replaced by Seat for free
However it happened again after 12 months however that time round they wouldn’t replace it for free and stated it would cost £185 to replace/fix
Just returned the car today to the lease company and the assessor said it was within wear and tear guidelines so didn’t incur any charges!
Guess I’ll keep an eye out for it on the new car (GTI 7.5)

I've got pretty much exactly the same issue, did you get a response from the dealership ?
