I have purchased a Mk7 2017 Gti DSG PP from VW.
The DSG changes appear far more noticable than I would have expected both going up and especially back down through the box.
My only other experience of a DSG was on a 1.4 Golf which seemed much smoother.
Is it possible to re-set the DSG so that it adopts my driving style rather than that of the previous owner?
I had an old Mercedes (1996) that the auto box could be re-set on and wondered if its possible on the Golf.

Yes, I believe you can. I have heard of dealer's doing resets on DSG.

Can be done with VCDS as well.

OBDEleven can also do a reset, but not sure what it means to reset the gearbox??

.....but, as you hint at in your original post, the 'box will adapt to your style and it doesn't seem to take too long. Also, there are a few settings in the menus to make changes to how the car and 'box feel.
Probably a toss up as to how long it will take to adjust itself to your style from default, after a reset, as from where it is now.
