As the title says, they are giving me the best quote but i need the documents sharpish.

Pretty sure they mail a copy of the policy conformation then post the hard copy.

Usually you can also print proof of insurance off their website (was the case with all car insurance I've ever taken out in UK).
If not and as said above you will get some sort of confirmation email. Print that and take it with, it will have the policy number on there, then write down their customer support telephone number should that not be in email anyway.
In case the police computer flags you as having no insurance and get stopped you can call the number and ask them to confirm to the traffic officer that you just took insurance out and are covered and just waiting for documents to be posted.

Esure dont provide any hard copies, all my documents were just loaded on to the website that I had to access. They appeared there about an hour after I took out the policy.
The free VW insurance is now 5 days and you have to phone up VWFS and apply for it.

5 days now (VW cutbacks), but yes, they pretty much offer this to facilitate easy taxation of your new car. My dealer said I had to phone VW Insurance services to set it up as soon as he'd given me the reg number. I promptly did that and they ask for a dealer code so they can email both you and the dealership a PDF of your 5 day certificate. They're open until 8pm tonight - ring them up and get it done if you know your reg number (assuming you do to arrange with Esure).

VW do 7 days free insurance as standard so far as I know. This allows them to register the car and tax it ready for handover.

Its 5 days now following a change of insurer by VWFS.

I am with Adrian Flux and everything is electronic with them. My policy and Certificate in on my computer and I can print it if I ever need it. The police rarely give producers now as everything is computerised or a phone call away.

And yet the thieving buggers charge a £50 admin fee for small amendments. When I changed my Scirocco to a GTD, it was actually cheaper insurance on the GTD, but I never saw a difference back, just a flat £50 charge for 3 minutes work (that's ho long it took them to send me a PDF policy with the new car details on it.
