baisicaly I'm rebuilding a used engine I have, apparently it was mechanically sound and it doesn't look like there was anything wrong with it on the inside but I plan on replaceing all the bearings, piston rings and valve springs ect

this is what I have, one of the old pistons and rod just to look at,

as you can see there, is that a bearing in the small end of the rod ? and can it be removed and replaced?
and it's soon to be going into mine because my small ends are tapping,
also welcoming advice on rebuilding an engine as I haven't done it before

It's not so much a bearing, more of a bush. Well worth replacing. It's actually available sperately from vw under part no- 026-105-431. You must have a machine shop fit these for you as they must be carefully pressed in (easy to damage as its bronze), then it must also be honed to match the gudgeon pin.

And unless you've kept a check on which pot the pistons etc have come out of you're unlikely to get a good result...

Yeah the other 3 are still in the block at the minute, I'll keep that in mind!
am I aswell sending the block to a machine shop?
