SO I went on holiday for a couple weeks and I left some soft surf racks on my roof while I was gone. They are essentially straps that run through doors with a soft foam pad on the roof.
I assume the door seals let some moisture in and the inside was a wet in parts and the windows were fogged up.
2 weeks have passed and its showing no sign of letting up. I dried out the mats, put a crystal humidifier thing in there for a week but its not letting up. Kinda doing my head in. All the door seals look fine too.
What can I do??

Assume you mean a dehumidifier? A humidifier would only create more moisture.
Silica gel packs/bags dotted around the interior might help, or getting the car into a dry area, doors open with some heaters/blowers on it.

This is of no help but don't use that type of roof rack over time it will undoubtedly distort the rubbers and cause more problems

These cars leak from various places, inner door skin panel
Behind door panel is common for leaks, ive fixed mine and
Workmates car with same issues, also the door hinges need
Adjusting to pull doors closer to body, you can also apply
Rain x antifog to the glass to help with fog/ condensation
