how much play should be in my front bearings with the 30mm drive shaft bolt slackend off

you are not meant to check for play with the nut slack. and there should not be any play when its tight. they tend to start howling first before you can feel any play in them though.

there's quite a large amount of play in mine and they don't make a sound

so as long as there's no play with the nut tight I'm all good ?

275nm aka scaffolding on power bar

jeez not quite a scaffold pipe . 2 foot long breaker bar should be fine and then recheck after a couple of miles just to be on the safe side.

Ideally you do not reuse hub nuts. Though if you dont have a big enough torque wrench, call into your local truck or bus mechanic and ask them to torque it!

why don't you reuse the nuts?

because they are nylock. hence why you by a CV joint they give you a new nut along with it :)
