Is it possible i could make these Subaru front callipers bolt onto my hubs ?

Yes if you have access to a milling machine and can make up your own discs & hubs etc....
You can make anything fit but the question would have to be why bother?
are you running 300+ BHP?
do you have ABS?
Will it improve your driver experience - I doubt it as you will stamp on the breaks and yes the car will stop and probably put you through the windscreen and you will loose all driver control and skid/lock up 95% of the time...
It's a MK2 golf not an F1 car!!

An F1 car can stop from 60mph in 15metres (48ft), dout the golf could manage that

they are crap anyhow, the pots seize in them.
280mm setup with decent pads n braided lines is more than enough for a mk2 golf

This. Unless you go Golf3 wide-track in which case 288mm will see you right.

So what's the issue?
Do you have properly good quality pads and OEM-spec discs?

Pads are apec and I'm sure the discs are mintex been on for a while, why does one disc get warmer than the other?

Right but how do I unstick it, can I just clean all round the pistons and sliders

Try removing the slider pins and greasing them

I feel that fitting these callipers is slightly over ambitious for your technical skills if you are asking how to unseize/unstick your current set-up. I run G60s on my MK2 16vt and the only issue is the tyres loose grip rather than a lack of breaking power.

Maybe if you had more control over your loose tyres you wouldn't have issues with how much your car breaks?

It's because of the breaking power of your car that this never happens to you.

It takes a bit more than fitting callipers to test my technical ability

They are overkill on a mk2, light car and as said 280mm set up will be fine.
