everything seems to line up correctly and a worrying thing just had oil changed (broken guide) oil level sat fine, now nothing shows up on dipstick.... had 2l of oil lying around ended up putting it all in and still nothing!! -.-

You've checked that you definitely got all of the old guide off? Sometimes when they break part of it falls into the dipstick tube, check that there isn't a bit of plastic stopping the dipstick from going in fully.
Mine sits like this:

does your dipstick go right into your guide? as mines is to small at the top so sits out
-
Yes it does, I thought you'd be able to see from the pictures above.
Your dipstick guide is sitting correctly, the problem appears to be your dipstick. Something must be stopping it from going in fully. If it was me, I'd take off the lower engine cover and the plate underneath with the n249/n112 valves. Take off the dipstick guide and shine a torch into the tube underneath, my bet is there is a piece of your old guide blocking it.

Hang on, earlier you said that you weren't getting a reading? So with the dipstick as it is you weren't getting a reading, so you then stuck another 2l in and you're getting a reading?

If your dipstick isn't going all the way in then I would expect you to not get a reading. However if you've put an extra 2l in then I'd guess you've now overfilled it, which might explain why it is now showing a reading on the dipstick.
When you manage to get the dipstick in fully, I'd guess that the level will be too high.

That dip stick still has some of the old tube on it 100%,
I can see it in the picture. Remove the dipstick and pull the old tube off of it.

I was going to say old dipstick tube is on the actual dipstick!
