Is there only 1x plug/connector going to the back of the clocks ie speedo and everything

As far as i can remember there is only 1 plug

YES!

One big white plug.
The clocks come out easy enough if you drop the steering wheel.

When extracting the clocks from the dash be careful not to lose the rubber grommets that are on both of the bottom locating lugs as when you refit them they wont sit in place as snugly and may rattle.
