Does the standard mk6 GTI with DSG have a launch control built into it? I'm sure I've seen a video of a launch mode on a Golf R but is it specific to the R or can the GTI do it to?

Yes and it was included in the drivers manual too. Loads of stuff on launch control use the search and YouTube. It's fun to use but not all the time unless you want to wreck the clutches in the DSG.

will it be on a 1.4 TSI (160) GT with DSG?

You could find out if it's on your car by trying it: Turn off ESP, DSG in sport mode, foot on brakes, floor the accelerator [Revs should stick at 4000] release brakes.
For obvious reasons and as mentioned already, I wouldn't recommend using this often unless you want to damage your clutches. [I've not used it on my R yet as it's only done 1500 miles and may not be ready for the shock  ]
