Ok now I have my very basic 1985 jetta I want to fit an imob switch hidden somewhere as it has no alarm or anything other that a clamp on steering lock.
What's the best way to go about this?
I'm guessing I bypass one of the ignition wires to a switch somewhere?

The correct way to do it is via the back of the fuse box, the cheap way is via ignition switch live. Any car crim worth their salt will bypass an immobiliser wired through ignition live
-
Or they would look on here and know you ve wired it through fuse box

You could use a double pole switch and break into the coil feed wire on one pole of the switch, and into the starter solenoid trigger wire on the other pole. Of course, any of this can be hot wired, but you have to believe that the type of little sh!! liable to nick the car won't have the sense to get over this
Good luck anyhow

Ignition coil live via rear of fusebox, cars with fuel pumps should have that killed too. Personally I wouldn't skimp, if you're worried get a security system but fit it yourself as in my experience alarm fitters have no respect.
