I had a K&N induction kit sounded great but sometimes at random it would cause my car to cut out so I done my airbox which sounds the same really thats all I wanted it for was sound.

I'm confused as to
1) what this does to performance?
2) why it does it?

What does the increased air flow do? Don't want to spend time on this too not even notice any difference

Its a mod people do to try and get power gains that in my opinion is pretty much a waste of time.

It wont increase air flow. Will just change how the air actually flows. The engine will only be able to suck as much air as the filter allows.

You would be far better off getting a filter kit and fitting that. Even that will only gain you a tiny bit of a gain.

In simple terms if you want more power you need to put more air into the engine - the more air you put in the more fuel you can put in = more power.

Id agree its a waste of time. The baffles will have been designed to induce turbulence to the flow. They will have been engineered for a reason. They wouldn't waste materials for nothing.
