I've had a Nav unit fitted, so I've got an RCD510 DAB for sale (with code) if you're interested?

If your RCD 310 is DAB, you won't need a DAB aerial.  If it's not DAB, you have potentially some major work to do to get a proper and effective DAB aerial installed.  As for any other issues, I recently did exactly what you are proposing and it was plug n' play so no other issues - but then I already had DAB.

£250 plus shipping... Comes with code and user manual.
Here's the actual unit... Just before removal, when the car was less than 5 months old. (61 reg GTD)

You will only have a DAB aerial if the car originally had DAB.

It seemes that VW made wiring looms for each specific car dependent on factory spec, rather than one loom fits all. That's what makes retro fitting stuff more complicated than it needs to be.

I'm just curious but if the DAB needs a special aerial how many aerial sockets are there on the radio, 2 or does it use a splitter?

Yes. I did the very same swap in a GTI and everything worked as it should.

In a non-dab car with the aerial built in to the rear side windows or sharkfin, would these not work with DAB?
