You could float one behind on a rope as a spares barge

Would maybe look at vauxhall Astras and vectra, ford escorts and mondys, there's a seat ibiza on eBay with a years mot on it for £380, I'm sure with a bit of haggling and explain your reasons you'd get it for 333.
Would probaly look at your common cars as part etc are cheaper and easy to come by. Maybe worth looking at jap cars for reliability reasons as your planing on doing the rally in it

We're ruling out automatics as on the mountain roads they'd be awful. Something pretty big as well. There are a few Volvo's knocking about, and definitely tonnes of mk3's.

Been here bob for the ramshackle Rally!
what we found was Volvo's perform well esp the 440 turbos and you might find a 740 or 760 for silly money!
By the end if the trip we ditched the cars at breakers and took a flight home
Have a look in here mate
It might give you an idea of the sh!tters they run but reliable sh!tters!

Actually money is pretty tight, we want something under £333 really.  Can't afford to buy something more expensive.

Well you might be able to find a Nissan bluebird diesel for that kinda of money and they are solid I believe?
