Apparently is the method of choice in Australia. Seals in the juices. I just cook mine upside down.

Yes. It works with all poultry. You can also turn it over, covered in foil, and let it rest for 30 minutes. Does the same thing. As a bonus you get a crisp bottom, so you can eat that meat as well. FYI that's also the other bit you get in a KFC.
Putting a rack in the backing tray to lift the bird is great. You can then use the fat for gravy and roasting vegetables at the same time.
