Right vr6 sits at 70 all the time.
What makes the fans come on? Once the car is hot, oil at 90+ the vans seem to be constantly on, so the water temp will never rise above 70. the vans only come on when hot, not when it's cold. Could I have a dodgy fan switch?
Or do the fans come on from oil temp?
I'm confused now and starting to feel thick lol

Fans will be controlled through the fan switch and a timer relay, water temp will bring them on and nothing to do with oil temp.

even if your fans are on quite alot at least its not overheating!

Around 85 / 90 from memory.

See why I am confused  water temp always at 70 and fans are ment to come on at 85/90+
So what should I be checking? what sends the temp to the dial?

Thermostat.

Temp sender, nothing to do with the thermostat
However if it is running cold then you could have a air lock or thermostat problem.
