My temp gauge started dropping slightly whilst driving, also not getting up to temp as quick.
VAG COM shows constant temp of 92-93Deg whilst gauge fluctuates between 81-90.
I changed the thermostat 6 months ago and the temp sender 2 1/2 years ago.
I am confused as the symptoms suggest thermostat but the VAG COM readings are throwing me, could it possibly be a problem with the gauge itself?

itll prob be the temp sender has broke, it sends 2 signals, one to gauge and one to ecu so thatll explain why the vag com says its ok

yep temp sensor i'd say
