Although I love the idea of lap belts in the back in the event of an accident they'd be as useful as a chocolate fireguard. We also have a small person to consider and she has to go in the front with a booster seat at the moment.
So.. What would be involved fitting 3 point seat belts.. I would imagine some decent welding. And would a tin top mk1 give me the right parts?

Look in the classic mags, I am sure one of the seatbelt companies should be able to help.
Mk1 hatch parts will not work due to no pillar etc to mount to.
