i searched and researched and just want to double check before i start taking my car to pieces that i'm going in the right direction.
my car now hardly ever idles at all and just drops revs and cuts out when i keep the clutch pressed in without giving it throttle. It starts back up fine just have to keep heal and towing in traffic to keep the revs up.
I've also got a slight missfire so could this be related?
I'm going to give the throttle body a clean out and also replace the rocker top pipe that has been temp fixed with a non standard item. and check the plugs.
anything else i can check whilst i'm under there?

The breather pipe will not be helping but clean the throttle body out and see if any better.

Yes. When my crank position sensor gave problems the cutting out was a distinct sudden loss of power as if someone had cut the power switch.
Yours sounds much more like a degenerative type issue as Wayne has said. Rough idling + stalling at junctions sounds like a classic dirty throttle body or starvation due to blocked breather hose. After those things then check there are no leaks in any vacuum hoses. After that try cleaning the MAF sensor.
Good luck!

Unplug the maf to see of it improves. I'd get vagcom too, you'll probably have a fault code of some sort. Make sure all vacation pipes are ok too

would suggest plugs, leads, dizzy cap & arm and air filter if they've not been done for a while too. Also check and solve any airleaks, etc.
Worth checking crank sensor wiring too - under the oil filter. If damaged = replace sensor -> GSF about £50.

Mine did the same as this and I did the following.
Cleaned the throttle body with carb cleaner and a brush.
Took the breather pipes off and soaked them in a bucket full of carb cleaner.
Took the top off the breather block and gave that a good clean too.
Replaced the vacuum hoses.
Cleaned all the pipes out and noticed the crankcase breather pipe had a small tear in it.
Replaced it and along with other bits car runs spot and has been faultless.
I have a braided breather pipes and vacuum hoses if you need some?

my mk 3 8 valve used to be the same i clean all breather pipes, throttle body, plugs, and check air flow and filter about once a month when i first did this it was so bad had to re set all my sensors as it was idling about 2k amazing diffrence !! there is a sticky with things to check and go though have a good read though that i found stuff there i didnt know about hope this helps
