Bit of a strange one here.
Michele bought her 96 8v GTI last week. We have done a good few miles in it but found it cuts out now and again. It starts first time and everytime, idles at around 900rpm, goes well etc. I gave her a full service the other day using OE airfilter, OE oil filter, 10/40 semi-synth oil, Bosch Super 4 plugs, dizzy cap, rotor arm and put some fuel injection cleaner in.
I did notice a very small split along one of the oil breather hoses.
She cuts out when warm, clutch depressed and on the brakes. She has done this 3 times over 200 miles since we have owned her.......Any ideas?

Most likely ECU relay, as it's a very common problem and it won't come up on any fault code readers. The symptom is cutting out when depressing clutch as you said.
ALWAYS get an original VW Relay, the ECU relay direct from them is about £14.

may be the throttle body needs a clean, or the coil or crank sensor is starting to die. ecu relay is dirt cheap though so worth trying first. well, clean throttle body 1st as thats free ;)
