You best bet, would be a visit to your local Pep Boys, and discuss your needs

actually took your advise before you put it on here haha.
discussed it with a local shop that family goes to regularly and they gave me advise.
Although, given you guys drive mk2s around regularly i wanted some of your advise on what you guys use...

UK tyres and US tyres are two very different things, believe me, your roads are nothing like ours!
If your running stock rims, or at least stock size rims, then go for the size that VW recommend..
Go for quality recognized brands, that is the best rule of thumb.. European manufactures, if you want a more OE look and feel to your car ie Pirelli,  Dunlop, Continental, etc these are all good tyres on UK roads, but maybe dire on US roads, this is why you need local advice, rather than thousands of miles away advice.. maybe try asking the same question on VW Vortex, for a more local answer
