I would recomend not taking bumpstops out and no helper springs, i ran mine without them and it was basicly running with no springs at all!
helpers you can either just take your front coilovers out and take the helpers out or just take an angle grinder to them if you're lazy

the thinner ones at the bottom are the helper springs - mine we're above though.. doesn't make a difference

You dont drive anywhere without speed humps then Toby?
-
or park in multistoreys :P
I've only lowered 40mm and its very close coming out of my works car park
-
TBH if you try and lower it anymore you run a serious risk of damaging the sump!
-
If you are set on going lower you can get top mounts that raise the suspension up 10mm thus lowering the car 10mm. Venom them. (http://www.venommotorsport.com/manufacturer_product.php?manufacturer=Supersport&category=suspension&product=TopMounts&make=VW&model=Golf%20Mk%203)

The problem is getting it back to the same height each time plus checking the camber / tracking.
