So I thought I'd post here:

Disconnect Battery, pop out the airbag, undo the large central nut, swap steering wheels, do up nut, replace airbag, connect battery.

Ok, so thats a very quick run down, but thats pretty much it.
You will need a small harness lead (about 4-6inches long) that costs £14 from your dealer if you're replacing a nonMFSW.

thanks cocopops. ill nip down to my local vw parts department tomorrow and order the wiring harness ready!
