I've a couple of 8" Kenwood subs that I want to put into enclosed boxes, for a new boot install. Does anyone know the cubic capacity that I will need to build the boxes to?

depends on the model.
find out the thiele small values for the drivers and then you can work out the optimum box. from there you can make it go lower (bigger box) or louder (smaller box with less low low bass).
you only need three values,
Fs
Vas
Qts
Find these out and I'll do the math for you if you like!
