So it's simple isn't it? If all you are is desperate to be driving a "new" car ASAP, at whatever sacrifice that might be, just cancel the GTI/GTD order and get an ex-demo or something else entirely like an M135i.  I suspect that the majority of people will stick with their orders so they get the car and spec that they wanted in the first place.

Especially as these demos typically have £3k of extras on and the dealers seem determined to get full RRP for them. For most of the early orderers, there is now light at the end of the tunnel.

Exactly, and here's the rub. Even if you wait a year and buy a used example from a dealer, it's still not going to save you a huge amount of money because of what it is.  If you can afford it, you really can't beat the pleasure of owning a brand new car built to the specification you wanted.
