Help ! Clutch/revs problem...

Has anyone out ther had similar problems. If so...please help. 1.8 GTi (non- turbo) 20v '99.
When pulling away... if i apply a small amount of revs- let the clutch out normally- the revs go berserk!
They'll drop drastically, so i  dip the clutch again to stop it stalling and they rev up higher to say 2k/ 2 1/2 k.
Car parks are a nightmare. Up down, up down. If i thrash it , it behaves better. If i try and pull away with no revs at all the revs don't jump about either. Only when a certain amount is applied. Also this is causing the car to 'hunt'.Just doesn't feel as smooth as it should. I've had an air mass meter fitted and a temp sensor. Still no joy. Any ideas very appreciated... i'm going nuts and don't really want to get rid of it.

Also forgot to mention, i can also physically feel the accelerater move away from my foot.
