Wipers - yes, you need to flick up the stalk to the first position and then they're in auto mode.
Yes, the car always starts in Comfort mode. I too find this a proper pain, even more than the lane assist/speed warning. This is a new thing in the 8.5. In my previous Clubsport (MK8), the car always stayed in my preferred "Individual" mode. Unless someone figures out how to change these things via OBD-11 or whatever (and apparently this may be nigh on impossible in these new cars), then we're stuck with this annoyance.
Heated mirrors - you have to rotate the knob on the door card to the "Heated" position. Don't leave it in this position though, there's been many cases in the MK7 where the mirror glass goes flying off unexpectedly, possibly due to the heater being left on a lot! To get the passenger side mirror to auto-dip in reverse you need to have the knob set to the passenger side adjustment position.
I know there is something in the settings for the clock too, my car's clock was set "funny" too on collection, also an hour out if I recall. I think there's a setting in there someplace to set it to "AUTO" and 24 HR mode.
