Remove the part and the number will be somewhere on the inside, moulded in.

To help you find it, the number should start with something like 5G0, or 5G1, followed by 2 groups of 3 numbers.

I've always referred to these parts as the upper and lower steering column cowlings.

And yes, they will have a part number on, the last 2 digits are the colour code IIRC.

No real knowledge of removing these on a MK7.5 golf, but normally there's 2 or 3 screws on the underside of the lower cowling to remove then then the upper and lower are held together by some retaining clips and should come apart with a bit of a pull.

Relatively easy to do.

Maybe have a look in the workshop manua, its in the repair section, body, body interior section, here https://www.golfgtiforum.co.uk/index.php?topic=287703.0

Not sure, looking in the manual it shows the steering wheel removed, but you may be able to access the screws without removing the wheel.

Screws could be accessible if you turn the steering wheel left or right??

If it’s like the passat then there’s 3 torx (t25 I think) then 2 behind the steering wheel where the 2 bits of plastic meet (cowl)
Don’t need to take them off on the golf in my job but do on passat
