So presumable a price change is triggered if you want to remove an option as well as if you want to add one. Guess its too late for me now if I decide I made a mistake with those leather seats.

Unfortunately yes, it cuts both ways, it's a change to the spec. The only exception to this is the addition of the Heated Front Windscreen if requested before the increase, because it is still not on their systems to add at the moment. But, VW have called my dealer and said that even though it will have to be added after the price increase, the old pricing will still be honoured.
You'd need to make a decision quick and get the order updated and put through if you want to remove it.
I spoke about delivery estimates, and with the MY14 change, he basically said don't be surprised to get an early-to-mid August delivery. He said that nobody knows anything at the moment because all GTI orders are in a queue, and no build dates have been assigned yet. Better to set low expectations and be pleasantly surprised I guess.
