Pedal Potentiometer Setup Help

Hi Guys, Ive recently diagnosed a problem with my factory accelerator pedal/Pedal potentiometer, Ive bought a new pedal but without adjustment the card idles high unless I physically pull the pedal back, I can adjust the Potentiometer but I have never done this, can anyone give me some advice?

The zero position might need setting up in VCDS unless there's no physical adjustment possible.

Having replaced pedals in the past I've never had to make any adjustments, normally if you have to lift the pedal with your foot to drop the idle it means the potentiometer is knackered. Is the replacement a brand new part?
