I am intending on machine polishing my wife's Black 7.5 Gti next week. I will be topping it off with dodo juice blue velvet. Am I OK to remove the wax with a finishing pad with my DA or by hand?

Remove DJ BV by hand with good quality buffing microfibres. Fold the microfibre into four and buff off a panel, then re-fold and buff off the next, and so on, so you are rotating a fresh MF surface each time. You can’t really buff off wax with a finishing pad on a DA, it’s not an equivalent of hand buffing, you can buy MF covers (bonnets) that fit over finishing pads for that purpose, but it’s actually easier to buff by hand.

As Bec says Ian, remove it by hand this is a far gentler and safer way.
DoDo waxes are super easy to remove, so it wont take any longer doing it by hand.
