The thing that's holding me back is no RAW support for ISO 100 and no ETTL off camera support, yet.

The Fujis are meant to be very good, a lot of pro photographers are using them now, but also a lot of people are going for the Sony A7 because it's small and full-frame.
One such example here: http://www.thephoblographer.com/2014/06/09/oped-bought-sony-a7/

I've been pining for an A7 since rumours of them emerged.

Apparently the release models suffered light leak problems though.

The new A7s looks interesting, but the fact that you have to use an external recorder for 4K video is a bit of a bummer.

But how often are you going to be shooting 4K?
I don't know anyone shooting 4k yet (I know a fair few video producers) and 4k is slightly pointless as you have to down-convert the video for 98% of the audience. By the time that 50% of people have a 4K screen, you'll be looking at different cameras anyway.

The range of lenses for Sony isn't as good as Fuji in my opinion.

This is a fair point, however converting down from 4K isn't necessarily the plan.  It's the cropping that appeals to me.

If I've shot some particularly shaky video I can crop to the centre and use the edges as spill frames for a stabilisation plugin.

For now, I'll stick to 1080p though!
