OIL... what type and how often

Hello everyone,
   
I'm new to the world of VW, I've bought a 1983 Golf GTi about a month ago, and since then I been loving every drive in her, I can't wait to save up some cash and start my own little project.

Just a quick question, what oil to you guess think is best and how often do you top up?

Any help would be great and sorry its a lame question..

I would personally drop all the oil and start afresh with 10w 40 semi synthetic.  Depending on what your engine is like I would just check the oil once a week. A healthy engine should only need the odd top up now and again.
