Hi all, when im driving the golf the temp goes straight to 90 but if i go above 60 or put my foot down thegauge rises quite quick, but when i ease of throttle it drops, is this the temprature sensor or something more serious?

Temp sensor is a dual unit, if the one for dash and engine read very differently it should through the MIL (gets picked up 90%).
I would suspect your thermostat is not opening fully (check if radiator gets hot) or the impeller has separated from it's shaft in the water pump, or the impeller is missing wings....
